Creamy Potato & Smoked Salmon Soup

Whenever I’m feeling very lazy and there is little in the fridge, soup is on the menu. This is very simple, doesn’t require any liquidizing and is a lovely warmer on these cold winter eves.

Makes 2 big bowls:

1 stick of celery, diced
200g potatoes, diced
2 cloves of garlic, sliced
500ml chicken stock
50ml dbl cream
1 pack of smoked salmon

Sauté the celery and garlic with a knob of butter in a deep pot for about 5 minutes, until the celery is softened.

Add in the diced potatoes and cook for a further 2 minutes, to coat them in the butter & garlic. Pour in the hot stock and simmer for 15 minutes. Add in the double cream and simmer for a further 5 minutes.

The potatoes should be soft by now, so turn off the heat, season with lots of pepper and a bit of salt, finally adding in the smoked salmon and STIR. Don’t worry if the salmon starts to cook in the heat a little, it’s inevitable!

Enjoy with very buttery bread.
